As I recall, there are still a few Holy Wells in the Dublin, ehh.. foothills. That's one possible source (they're springs) that could be easy to get to, and if you can find any.

If you're brewing all grain in particular you would want to have an idea of the alkalinity and calcium content of the water. I suppose you could use the water test kits.

I wonder how happy the pensioner guard of honour would be with the sight of someone loading up the god juice into food grade plastic barrels?

This would be in the Stepaside/Kiltiernan area? I wonder how much of a hammering they might be getting with the water shortages?

I recall seeing one around Ballycullen also, but it was years ago. The DoEHLG could help as they are usually marked on the sites and monuments record, or check out old Ordnance Survey maps as springs and holy wells are usually marked. In fact, the current 1:50,000 Discovery Series has some marked I think.
