Why not consider offering themed trips to be booked in advance:

Amstel/Heineken: Make it like an Amsterdamn canal type trip - point out the river canals water ways and docks and stree the maritime history of Dublin

Guiness: The brewery and the quays etc.

Irish Craft Beers: Talk about the Irish craft breweries in the country and also the Dublin Brewpubs. Point out the pubs and brewpubs that supply ICBs. I am sure a couple of the bigger brew pubs might consider a sponsorship??
